About me

Hi. My name is Shelby and I decided to help Zach out with the Gluten Free Greensboro blog. I'm 35 years old and was diagnosed with Celiac Disease in August 2009. This came a year after I was diagnosed with Type 1 diabetes. I had never heard of Celiac Disease until I was listening to The People's Pharmacy on NPR one day. What caught my ear first was that it was highly correlated with Type 1 diabetes. Then, I listened to the long list of multi-systematic symptoms and thought that they all sounded a little familiar. I asked my doctor to test me for it and the rest is history. After spending a few days saying farewell to my old life, eating pizza and other fun foods I was planning on missing, I finally went gluten-free in September 2009. I've had my ups and downs over the last 9 months adjusting to a new lifestyle, and I wanted to share my GF in GSO experiences with you. I hope you'll share yours in return. Let's begin this journey...

I'm so thrilled to find this blog. I'm teaching a hands on gluten free cooking class this Sunday, June 6th from 2-4pm and would love to have folks come. We'll be doing easy weeknight breads.
